Baked Veggie Casserole
4 med red potatoes
4 eggplants or 2 large
4 medium zucchinis
2 onions chopped fine
1/4 cup olive oil or more if you like
2 jar’s pasta sauce or make your own if you like
Slice all the veggies ¼’ thick sprinkle the eggplants with salt and place in a plate for 15 min.
Mix oil and chopped onions with jar pasta sauce. If you make your own skip this step.
Place one layer potatoes smother with the sauce place layer zucchini smother with sauce layer eggplant smother with sauce you get the idea layer upon layer till you reach the top then the rest of the sauce to cover.
Bake un-covered in a preheated 350 degree oven for 40 to45 min check periodically so as not to burn it
